The Maître d’Hôtel and Head Sommelier of the Manoir du Lys, Yvon Lebailly, has cultivated a deep passion for the terroir for over 25 years. He has patiently built an exceptional wine cellar, with 650 references and 10,000 bottles, nurtured through his relationships with winemakers. Today, this legacy continues in the family: joined by his son Hugo, who arrived in 2023, he guides guests in perfectly pairing wines with the Michelin-starred cuisine.
